The end of the year is approaching fast and many celebrations are coming up. Everyone is looking forward to the tasty meals they will enjoy. You may have already planned your main dish, but what about dessert? If you have forgotten, look no further than this recipe for Tres Leches with Baileys. It is perfectly delicious.

After enjoying a great meal, we expect nothing less from our dessert. This variation of the classic tres leches cake will give a twist to your celebration by combining the delicious flavor of Irish Cream and three different milks.

Baileys Tres Leches Cake

Ingredients:
½ cup unsalted butter
1 cup sugar
5 egg whites
1 whole egg
1 teaspoon vanilla extract
1 ¾ cups flour
3 teaspoons baking powder
¼ teaspoon salt
¼ cup milk

1 can evaporated milk
1 can sweetened condensed milk
½ cup cold brewed coffee
1 cup heavy cream (for cake)
½ cup Baileys

3 cups whipped cream
¾ powdered sugar
Rosemary to decorate (optional)
Pomegranate seeds

Baileys Tres Leches Cake

In a large bowl, mix together the sugar and butter, then add the egg whites and beat until the mixture is light and fluffy. Add the egg and continue beating to remove any lumps. Add vanilla extract, flour, baking powder, salt, and ¼ cup of milk, beating constantly until all ingredients are incorporated. Make sure not to overbeat.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour the 1.5 Litre and 2 Litre utensils. Divide the batter and pour into the utensils, then place them in the oven and bake for 25 minutes. When done, remove the cakes from the oven, unmold the them, and allow them to cool on a cooling rack.

Meanwhile, in a pitcher, mix the cold brewed coffee, heavy cream, the rest of the milks, and the Baileys until well incorporated.

Baileys Tres Leches Cake

Slice one of the cakes into 2 layers using the Bread Knife from our Elite Series Cutlery Set. Place one of the layers on a serving plate and carefully pour the milk mixture over it. Then, use the Spoonula spread some of the whipped cream on the same layer as a filling. Place the second layer on top of the first and repeat the process. Slice the other cake into two layers and do the same. Finish by icing the cake all over with the whipped cream.

Decorating is optional, but we added rosemary sprigs on top of the cake to make a christmas tree and added more sprigs at the base of the cake. Adding pomegranate seeds and powdered sugar will give the cake a festive holiday look. When it comes to decorating, your imagination is limitless. Enjoy it!
