Roast beef at Christmas time is a special holiday tradition for many families. As a kid, I remember many a Christmas dinner spent gathered around the table with my family to share delicious food and the joys of the season.
This is the kind of tradition that every parent wants to pass on to their children; one of sharing, celebrating, and just spending time being a family. For a festive Christmas dinner with your family, nothing beats this impressive Fantastic Holiday Roast.
2 tablespoons paprika
2 tablespoons brown sugar
2 teaspoons salt
2 tablespoons ground pepper
2 tablespoons minced fresh rosemary (or dry if unavailable)
1/3 cup chopped white onion
2 teaspoons Worcestershire sauce
2 tablespoons dry mustard
4 tablespoons cranberry sauce (or jam if you prefer)
2 cup of Coca-Cola (or 1 cup beef broth)
2 pounds top round beef
4 tablespoon of oil
In a small bowl, combine the ingredients for Delicious Rub then spread it to cover all sides of the the roast. Let the roast rest on the counter for 30 to 45 minutes until it reaches room temperature to allow the rub to really saturate the meat. You can let it rest in the refrigerator if you prefer.
Preheat the oven to 375 degrees. While the oven is heating, preheat the Contessa on medium high heat. When ready, add 1 to 2 tablespoons of oil and nicely sear the meat, about 3 to 4 minutes per side, until all sides are seared and golden.
Place the Contessa in the oven and roast it uncovered for 60 minutes, approximately 20 minutes per pound. When done, remove it from the oven and allow it to rest on a cooling rack for at least 30 minutes.
While the roast rests, reheat the Contessa with the drippings on medium high heat. These drippings are so flavorful make sure to use them! Add the onions and cook until super soft and golden. Add the 2 teaspoons of Worcestershire sauce, 2 tablespoons of mustard, 4 tablespoons cranberry sauce (or jam) and 2 cups Coca-Cola (or if you prefer not to use soda in your diet, simply use 1 cup beef broth). Bring the mixture to a slow simmer, stirring frequently, and allowing the ingredients to blend together into a delicious sauce.
Keep heating the sauce to reduce it for 15 to 30 minutes more while your roast finishes resting. Keep the sauce simmering on low until you are ready to serve it. Don’t worry the longer the better! Over time, it gets better and better!
When ready to serve the roast, cut it into slices and serve them with the sauce. I love thin slices best as more sauce can saturate the meat! Serve with your favorite side dishes for an incredibly yummy holiday meal!
