Grilling is both easy and tasty. When you think about grilling, the first foods that probably come to your mind are grilled chicken, vegetables, or steak. But, have you ever thought about grilling lettuce? Maybe not, but we can assure you that once you try it, you’ll want to do it again. It is very common to grill vegetables like eggplant and asparagus, not just because the grill enhances their flavors but also because they look super attractive with grill marks in the plate. Surprisingly another vegetable that comes out perfect when you grill it is romaine lettuce.

On this occasion, we will roast some lettuce and complement it with a simple lemon dressing, olive oil, parmesan cheese, and tasty grilled chicken to create a complete meal with a lot of flavor. Best of all is that you only need one utensil!

Grilled salad with chicken

1 head of romaine lettuce
2 chicken breasts
2 tablespoons parmesan cheese
1 lemon
2 teaspoons olive oil
Salt and pepper to taste

Cut the head of lettuce in half, lengthwise. Wash and dry well. Heat the Classic Grill pan on medium, and when it is hot, place the lettuce with the cut sides down and let it cook until grill marks form, about 2 to 3 minutes. Turn the lettuce over and cook it on the other side in the same way.

Grilled salad with chicken

Season the chicken breasts with salt and pepper. After you remove the lettuce from the Classic Grill pan, add the chicken and cook for five minutes on one side, then turn it and cook until done.

Place a lettuce half and a chicken breast on a plate. Slice the lemon and squeeze some juice over the lettuce and chicken then drizzle with olive oil and sprinkle with parmesan cheese. Season with salt and pepper to taste and sit down and enjoy this simply delicious meal.
