Lemon Delight (Delicia de limón in Spanish) is a quick and easy alternative to heavy oven-baked desserts. Just combine the ingredients, chill in the refrigerator overnight, and it is ready to serve and enjoy. This recipe requires only a few, readily available ingredients, making this dessert not only delicious but very affordable when you need a deliciously light dessert that will serve several people.

Inspired by the flavors of the famous Dolce Italiano from the Sorrento and Amalfi coast of Italy, this dessert is a delectable combination of tangy and sweet and perfect for sharing with family and friends. Best of all, it makes 16 servings!

Lemon Delight

4 cups (20 ml) of lemon juice (approximately 20 lemons)
12 packages of vanilla cookies (about 96 cookies)
2 14-oz cans sweetened condensed milk
2 12-oz cans of evaporated milk
2 cups heavy cream
Lemon zest for decorating
Sweetened condensed milk for drizzling (optional)

Lemon Delight
Combine the milks and heavy cream in a large bowl using the Combination Whisk from our Kitchen Tool Set. Once they are completely incorporated, add the lemon juice and continue beating. You will notice that the mixture becomes thicker.

Place a layer of vanilla cookies in the Contessa and cover with the milk and lemon mixture. Alternate layers, finishing with the lemon cream. Refrigerate for at least 6 hours, or overnight. Garnish with lemon zest just before serving and drizzle with sweetened condensed milk if desired.
