Thanksgiving is a special holiday for gathering around the table with loved ones to enjoy delicious food. Turkey is mostly always the main dish, but Thanksgiving wouldn’t be complete without a delicious dessert to finish off the meal.

This Pumpkin Tres Leches Cake is a variation of Tres Leches Cake, and it is an excellent choice for a Thanksgiving dessert since it is also pumpkin season! Best of all is that you don’t need an oven to make it. With Rena Ware you can bake on the stove and save time and space.

Ingredients:
½ cup unsalted butter
¾ cup sugar
¾ cup mashed pumpkin
6 egg whites
2 cups flour
4 tablespoons baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 can evaporated milk
1 can condensed milk
2 cups of whole milk
Whipping cream
Ground cinnamon

Pumpkin Tres Leches Cake

Start by beating the butter and sugar until creamy. Add the mashed pumpkin and vanilla and mix well. Add the egg whites one at a time and continue beating for one minute. Mix together the baking powder and the flour and add it little by little to the pumpkin egg mixture, stirring well until all ingredients are incorporated. Be careful not to beat excessively, since it might change the consistency of the cake.

Grease the Large Frypan with butter and pour the batter into the utensil. Cook over low heat. If you use the Induction Cooker it will take approximately 40 to 45 minutes. Time may vary if you use a gas or electric stove. The best way to know if the cake is ready is to insert a wooden skewer and if it comes out clean, it means it’s ready. Next, we will unmold the cake and let it cool on a cooling rack. It is very important that you don’t leave the cake in the utensil once it finishes cooking. Pumpkin Tres Leches Cake

Once the cake is completely cool, return it to the utensil. Mix together the evaporated milk, condensed and whole milk in a jar and pour the milk over the cake. Once the cake has absorbed all the liquid, cover it with whipped cream, and sprinkle ground cinnamon on top. Surely at this moment you want to eat the cake, right? But… you should let it chill in the refrigerator for at least 6 hours. The longer you leave it in the refrigerator, the more the flavors will intensify. Be very gentle when serving. This cake is very delicate and can crumble easily.
