There are many salads you can prepare, but there is not another one like this succulent Russian Potato Salad, which is a very traditional side dish served on special occasions in Latin America. Our version is a little different, because we are adding shredded chicken! Let’s cook!
1 chicken breast
2 cups of chicken broth
2 pounds of potatoes, peeled*
2 large carrots, peeled*
½ cup celery, diced
1 red apple, diced
½ cup of cooked peas
¼ cup onion, finely chopped
1 ½ cup of mayonnaise
1 teaspoon of mustard
Salt and pepper to taste
*Dice the potatoes and carrots using the Chef Knife from our Elite Series Cutlery Set. If the appearance of the dish is not a priority, don’t peel the vegetables to retain the vitamins and minerals found directly beneath the skin. A good rinsing and scrubbing is all that is necessary.
Preheat the 1.5 Litre, add the chicken, and brown on each side. Add enough broth to cover and simmer on medium heat until cooked all the way through, about 10 minutes. Remove the chicken from the utensil, let cool, and then shred it and set aside.
Place the carrots and potatoes in the 4 Litre Utensil, add ¼ cup of water of water, and cover with the Nutri ✓ Sensor in the open position. Cook on medium heat until you hear the whistle indicating a water seal has formed. Lower the heat, and place the Nutri ✓ Sensor in the close position. Cook for about for 15 minutes more.
In a large bowl, mix together the apple, celery, and onion with the Spoonula. Add the chicken, peas, mustard, salt, pepper, mayonnaise, and mix well.
After the potatoes and carrots, are done, add them to the mixture and stir carefully until all the ingredients are incorporated. Cover and refrigerate for at least two hours. Serve in individual bowls and decorate with bell pepper strips. If you prepare this salad for the holidays, you can alternate red and green pepper strips, and it will look very festive!
Some people prefer this salad without apple or celery, and you can add your choice of ingredients like boiled eggs, as part of the salad or as decorations. As you can see, there are many variations of this recipe. Which one will you try?
